Sick of the same old way of preparing vegetables? I was too. Scanning the net for quick recipes that could be made from ingredients easily found in the kitchen, I came across many versions of the good old stew. I decided to mix and match the recipes and ended up with the following yummy one:

Put chopped french beans, finely chopped onions, finely chopped carrots, potato cubes, sliced green chillies as well as cauliflower florets in water mixed with salt and turmeric in a pressure cooker. After one whistle, open up the cooker and add whole garam masala - cardamom, cinnamon sticks, 1-2 cloves, lightly crushed fenugreek seeds and lightly crushed pepper. Let the water evaporate. Then add thick coconut milk and stir. Heat oil, add mustard, curry leaves and dry red chillies to it. Pour this tempering on the stew and stir. Adjust salt, if needed. Garnish with chopped coriander. Serve hot with rice or chapati.

I guess, you can add cashew paste for added flavor and creaminess. But I gave it a pass. :-)
